05/30/2007 15:38 2.5 gallons of water at 48°F on gas at highest setting
05/30/2007 16:03 Hit 130°F, gas to 5, adding grains
05/30/2007 16:12 Holding nice at 130°F on gas five, drained and reset clock.
05/30/2007 16:15 Dropped to 135°F during drain, will hit high until back up near 150°F. grain bag may have scorched a bit, will stir more often

05/30/2007 16:23 Drained at 151°F, drop to gas 5 again at 155°F

05/30/2007 18:43 At 74°F, read SPGR 58 and 7.5% pav. Adjusted Specific Gravity is 1.060. Finished at 4.5 gallons, so may add water or ice, waiting for fermentation

05/31/2007 05:30 Bubbling at about 4 sec between bubbles. Dropped temp contrl to 55
2007-06-02 13:37 Still at about 4 sec between bubbles. Temperature holding at about 54°F
2007-06-03 14:21 Still at about 54°F, fermentation increased to on bubble evert three seconds
2007-06-05 15:25 Due to power issues, got up to 60°F last inght. Now holding at 55°F, fermentation down to bubble evert six seconds
06/06/2007 13:13 Noticed that temp band was at 52°F, bubble down to 11 seconds. Lowered thermometer to beer level, now reading 52°F so Primary may have been lower than I thought.
06/06/2007 18:00 Racked to secondary, added 1/2 gallon boiled tap water. Pre-addition sample at 60°F read SPGR 16, after water read 18 at 62°F
06/07/2007 05:35 16 seconds between bubbls in secondary at 52°F
06/15/2007 09:00 earlier in the week I adjusted the temperature, lowering to about 46°F
2007-07-01 15:00 Bottled at just under 4.5 gallons. Forgot to add priming dextrose before racking to bottling bucket, had to stir it up and add solution. Tried to minimize oxidation
  SPGR 1.012 at 50°F, looks like SPGR 1.011 at 65°F. Going to say FG 1.011, so adjusting OG to 1.055 (added half gallon water at secondary) gives just about 6% ABV
2007-07-02 17:00 SOMEBODY shut the AC off, house got up to 88°F. Hoping that beer stayed under 80°F...

Notes:
Need to add at least .5 gallons water when sending to secondary

Original plan:

smack activator
half the water 30 minutes at 130-135, drain every 10 minutes
30 more at 155, rinse at hottest tap, bring to boil
add DME and Tettnanger and boil for 45
add Spalt and Moss and boil for 15
pitch between 70 and 80, move to 55 degrees for primary
secondary at coldest over 35 for four weeks

Afterthoughts:
Very good lager, smooth and refreshing. Just a hint of maltiness, but nice and clear. Very happy with the results
