07/05/2007 13:18 Hit boil, going to toss half and replace with Brita-filtered
07/05/2007 13:25 Changed my mind, starting boil over again with a gallon of Brita-filtered water
07/05/2007 13:50 Back to boil after adding Dry Malt Extract, pinch of Gypsum, and .25 oz Cascade Hop Pellets
  Very active boil, dropping down to 7
07/05/2007 13:56 Down to 6.5 gas, still very active boil!
07/05/2007 14:45 Added about 0.125oz Wiliamette Hops pellets

07/05/2007 15:05 Down to 90°F, into gallon carboy overfilled with filtered water.
  Used turkey baster to drain down to 1 gallon, took sample SPGR 1.040 at 83°F. Corrects to 1.043
07/05/2007 15:15 Setting in chiller at 75°F until fermentation starts
07/05/2007 19:00 Seeing fermentation, dropping to 70°F
07/06/2007 12:00 Seeing krausen rise, swapped out fermentation lock for a blow-off tube.
07/07/2007 Not seeing any outflow and foam subsiding, back to fermentation lock
  Unsure of actual temp... set controller to 70°F, door thermometer says 70°F, meat thermometer says 72°F and thermocouple reads 68°F. Floating thermometer says 70°F
2007-07-15 11:42 Bottled out of primary with syphon, knocked way too much crap into the beer in the process.
  At 71°F SPGR 1.011 (after I added an ounce of priming sugar... Doh! So final gravity is 1.012 and ABV is 4.1%.
  Final yield was 100 oz plus sample, for an efficiency yield of about 80%
2007-07-22 Tried first bottle.... very very buttery and diacetyl, going to wait another week
2007-07-28 Tried another bottle, still quite profoundly diacetyl
2007-08-03 20:25 Tried another bottle, now it is finally drinkable. A very plain session beer, perhaps, but the butterscotch has left. Crazy foam, though, took a long time to get it all into a glass.
