Batch six: "XXXV CPA" (Cherry Pale Ale)

2007-07-10 09:40 2 gallons in kettle, added grain bag, high heat
2007-07-10 09:54 Added brew salts as pot hit 110°F.
2007-07-10 10:07 Hit 170°F. Drained grain bag, sparge with a1/2 cup R/O water, gas on high for boil
2007-07-10 10:22 Boiled, removed from heat and stirred in Liquid Malt Extract
2007-07-10 10:53 Back to boil, added 1oz Hallertau hop pellets, gast to 9 for 55 minute boil
2007-07-10 11:05 Very gentle boil, set gas back up to high.
2007-07-10 11:33 Dropped in Whirlfloc tablet. It effervesces.
2007-07-10 11:49 Added 1oz Cascade hops pellets, back up to boil on high.
2007-07-10 11:59 Added 3 lbs cherries, pitted, pureed, and stored in fridge overnight.
  Started 20 minute timer. Temp at 180°F, trying to keep between 160°F abnd 170°F
2007-07-10 12:06 Stirred in a cup of room temperature water (R/O) now at 170°F
2007-07-10 12:20 Got down to 165°F before end, transferred pot to ice bath
2007-07-10 12:35 Pot at 90°F, poured into fermenter without straining, added 70°F R/O water until at 5 gallons
2007-07-10 12:45 Pitched yeast at about 82°F, sample at same read SPGR 1.048, corrects to 1.051
2007-07-10 12:50 Into chiller at about 68°F, may have back-sucked a tablespoon of Idophor/water solution into fermenter
2007-07-11 16:52 Chiller reads 72°F, seeing about 82 bubbles per minute. Setting chiller controller to 69°F
2007-07-12 17:33 Chiller reads 68°F, seeing bubbles every 18 seconds, about 3.33 BPM
2007-07-15 11:00 Racked to secondary, returning to chiller. There was a lot of trub left over...
2007-07-30 20:00 Primed and bottled. Filled Three gallon keg and gave shot of CO2 to seal, blew peg off and damned near lost an eye. Not sure I found all of the pieces but it seems to work now, as it sealed.
  SPGR 1.010 at 51°F, FG should be about 1.009. With OG of 1.051 this should yield 5.6% ABV
  A little watery, bad good Pale Ale with a hint of Cherry. Light scent, but not sweet... surprisingly dry.
08/07/2007 16:00 Tried out new gas lock fitting on keg, seems to vent all gas if not hooked up to gas source. Had to repressurize after spraying beer on myself
2007-08-11 12:35 Tried a bottle. Still just a bit sugary and a bit of a bite... needs to sit a while longer
