Batch seven: "Imperial Pale Ale"

2007-07-15 14:11 1 gallon R/O on heat, pinch of gypsum, pinch of calcium carbonate.
2007-07-15 14:28 Added grain bag at 165°F, temp dropped to 155°F. Gas 4 for 30 minute steep at about 160°F
2007-07-15 14:40 Still at 155°F, gas up to 5
2007-07-15 15:00 Removed and sparged grain bag, bringing back to boil
2007-07-15 15:05 Close to boil, adding 1.5 lbs Briess Pilsen DME
2007-07-15 15:10 Back on high for boil
2007-07-15 15:13 Boiled over, even without lid. Dropped to gas 9 and added 1/2 oz Cascade hops pellets
2007-07-15 16:00 Added 1/4 tsp Irish Moss and 1/2 oz Cascade hops pellets for final 15 minutes
2007-07-15 16:15 Heat off, ice bath.
2007-07-15 16:25 Down to 80°F ended up at 0.5 gallons. Will start with a lot more next time
  Added R/O up to 1 gallon, raised temp to 85°F took 4oz sample, at 85°F SPGR 1.042 for OG of 1.045. Qbrew had guessed 1.079!
2007-07-15 16:45 Still at 85°F. Pitched yeast (rounded up to 6g) and added blow-off tube
2007-07-16 19:20 Bubbling away like crazy in the blowoff jar. Looks like a lot of crud still in the fermenter though, seems like lost volume was in beer, not hops crap.
2007-07-18 16:00 Replaced blow-off tube with fermentation lock, looks like more beer than trub was ejected.
2007-07-21 11:30 Racked to secondary, about .75 gallons remaining
2007-07-29 13:08 Dry-hopped with 0.75 oz Williamette (5.1% AA)
2007-08-08 13:08 Bottled, sample was 1.014 at 58°F. 4% ABV. "Bottling Wand" got clogged with sediment before I could even get a siphon going
  Bitter and hoppy but somehow not quite what I was expecting.
  Final volume was six 12oz bottles, plus a four ounce sample and about a cup of discard.

an idea for next small brew... use bucket instead of sink to chill so water can be reused
