Coyotl Nanobrewery
Batch ten: Coyote Kölsch

11/01/2007 09:30 Activated yeast pack, started soaking kit in Star-San
11/01/2007 10:23 Started 3 gallons on heat - 2gal R/O and one gallon Britta filtered
11/01/2007 10:55 Hit 160°F, adding grain bag and dropping gas to 3
11/01/2007 11:30 Removed grain bag, strained, rinsed with 170°F water, back on high for boil
11/01/2007 12:07 Hit boil. The remaining Weyermanns was 5.8 lbs, not 3.5, so I am not using the 2lbs dry pilsner
11/01/2007 12:18 Added 6lbs Weyermanns Pilsner, 1/2 lbs Briess Wheat DME, back on high for boil
11/01/2007 12:40 Back to boil. Dropped in .5 oz Pearle and started 60 minute timer
11/01/2007 13:10 Dropped in remaining .5 oz Pearle
11/01/2007 13:27 Added .5 oz Tettnang, Whirlfloc
11/01/2007 13:42 Removed from heat, set covered pot in ice bath, stirring in opposing directions
11/01/2007 13:47 Down to 120°F, poured into fermenter with 1 lbs ice. Temp dropping below 55°F, added one gallon R/O water at about 75°F
11/01/2007 13:59 Temp still at 55°F, boiling 2 cups water to add.
11/01/2007 14:06 Mark recipe as 5.125 gallons... still shows as about 58°F. Will let sit, but sample SPGR at 60°F is 1.045
11/01/2007 14:19 Pitched at about 60°F, rocking for at least two minutes.
11/01/2007 14:24 In chiller at about 65°F.
