Batch twelve: Tom's West Coast Pale Ale

01/17/2008 13:17 started heat for 2.5 gallons, added brew sock with grains.
01/17/2008 13:42 Temp at 160°F, added brew salts and dropped gas to 4, will hold for 15 min with lid on
01/17/2008 13:57 removed grains and rinsed, covered and back on high for boil
01/17/2008 14:18 hit boil, heat off, adding DME
01/17/2008 14:25 back on high for boil, covered
01/17/2008 14:36 Boiling, added 1.5 oz Cascade hops pellets
01/17/2008 15:22 added Whirlfloc
01/17/2008 15:32 added aroma hops for last 5 min
01/17/2008 15:38 off boil, in ice bath for chilling
01/17/2008 15:46 Damn, down to 110°F. Added about half a bag of ice to the fermenter and poured in wort. Came to about 2.5 gallons at about 68°F.
  Added room temp Distilled water until 5 gallons, temp is 70°F. Added yeast and rocked for two minutes, in chiller for Primary Fermentation
01/26/2008 Racked to secondary, SPGR 1.014 at 67°F.
02/05/2008 20:22 Dry-hopped with remaining 1.5 oz Centennial Pellet Hops (8.8% AAU)
02/18/2008  Bottled at FG 1.012 (at 70°F)
