Batch eighteen: East Coast Pale Ale

06/07/2009 13:45 Started 2.5 gallons R/O on high gas for 160°F strike.
06/07/2009 14:06 Rinsed mash tun with about a pint of boiling water to prewarm, added brewing salts to main kettle
06/07/2009 14:21 added mash water at 160°F, mash temp is 149°F, boiling more to add
06/07/2009 14:32 added at lease another quart of boiling water, finally up to 153°F, leaving for 20 minutes
06/07/2009 14:52 Was holding at 153°F, oprned and stired, holding now at 151°F.
06/07/2009 15:11 Stirred again, now down to 149°F
06/07/2009 15:43 Tried to recirculate, but liquor never cleared beyond Hefeweizen appearance. Drained gradually and then added 170°F sparge water, but added 1.5 gallons when I meant to add a single gallon. Sitting for 15 minutes to rest.
06/07/2009 16:11 Seems to have drained out fine with the valve half open. Gathered just about 3.25 gallons, 135°F,SPGR 1.050 putting on heat for first boil.

06/07/2009 16:56 Added 1 lbs Light DME, 3 lbs Pale LME, 2oz Spalt hops pellets (4.0% AA), 1oz Glacier hops pellets(4.9%AA), back on double-burner for boil.
06/07/2009 17:00 Begin boil, moved to single burner, milder boil.
06/07/2009 17:47 Added 1oz Willamette hops pellets (4.6% AA) and Whirlfloc tablet
06/07/2009 17:56 Added 1oz Willamette hops pellets (4.6% AA) for final aroma
06/07/2009 18:01 Off heat and on ice bath to cool.
06/07/2009 18:08 Cooled to 120°F and added to fermenter with full bag of cube ice. Dropped to under 60°F so I fished the remaining ice out and added room temp water (R/O) to bring volume to 5.5 gallons.
06/07/2009 18:37 Pitched at 70°F, chiller set to 68°F for fermentation. OG was 1.042 at 70°F, correcting to 1.043 (estimate was 1.051)
06/08/2009 17:01 Had not started fermenting, noticed that the chiller was at 62&def;F. Opened door, turned off thermostat, and left at room temp
06/08/2009 22:30 bubbling finally, set chiller to 70&def;F and shut door
06/09/2009 09:02 About one bubble per minute, chiller holding at 68&def;F
06/14/2009 20:16 Had planned to rack to scondary, but thick frothy kausen still present. Blew some CO2 into it and resealed, back in chiller to finish primary.
6/20/2009 19:35:30 So... two weeks into primary and I still have a thick Krausen on top. Rack it to secondary anyway? Most of krausen fell after I opened it, just little bits of yeast slime floating. SPGR is 1.010 at 70 degrees and no off flavors other than yeast.

7/05/2009 18:00 Kegged, FG was 1.008 for a final 4.7% abv
  Initially no obvious off flavors, possibly fusel aroma, very light body

WLP008 East Coast Ale Yeast
Our "Brewer Patriot" strain can be used to reproduce many of the American 
versions of classic beer styles. Similar neutral character of WLP001, but less 
attenuation, less accentuation of hop bitterness, slightly less flocculation, 
and a little tartness. Very clean and low esters. Great yeast for golden, 
blonde, honey, pales and German alt style ales.
Attenuation: 70-75%
Flocculation: Medium to Low
Optimum Fermentation Temperature: 68-73\xb0F
Alcohol Tolerance: Medium
